Cook 1 cup of quinoa in 1.5 cups of water and .5 cup of fresh squeezed orange juice. In the meantime peel and steam 2 small potatoes. Once steamed cut them into chunks. Once both items are done put them together in a bowl and let cool. Then add a drizzle of olive oil, juice of one fresh lemon, 2 small oranges cut into chunks, 1 red and yellow pepper cut into chunks. 1/2 a cucumber cut into chunks. Then combine everything together.
