Ingredients
- 1 ripe avocado
- 1 orange
- 1/2 to 1 tsp green Tabasco sauce
- 1/4 tsp ground coriander
- 1/2 tsp sea salt and freshly ground black pepper
- 1/2 cup yellow grape tomatoes, halved
- 1 small cucumber(peel and cut lengthwise, spoon out the seeds, then dice)
- 1 large or 2 small radishes(cut in half, lay on flat side, and slice thinly)
- 2 whole wheat pitas, top third cut off
Cut avocado in half and remove pit. Scoop out avocado flesh and dice into cubes, and place in a medium bowl. Slice orange in half. take the one half and give it a squeeze over the avocado bowl. Just once around the bowl is fine( about 1 tbsp.) Add Tabasco sauce, coriander, salt and pepper. gently toss mixture with the tomatoes, cucumber and radish. Divide mixture into 2 servings and stuff into whole wheat pitas and enjoy!!!
