Welcome to my little hobby!! I love to eat and I am passionate about making sure that the foods I eat and the foods I feed my cute little family are healthy. I have so many wonderful recipes that I have found through the computer or some of my favorite cook books, so I thought it would be fun to share them with my wonderful friends and family. I am going to be posting a new recipe every day, some will be gluten free, sugar free, or just healthy:) I believe that it can be fun to eat healthy and can taste great as well. Now every weekend I will be throwing in some of my favorite treats and goodies recipes because I believe that everyone should be able to have a cheat day, and lets face it, life without some of our favorite treats is just not that fun. So enjoy these recipes, and hopefully they will make eating healthy fun again, and PLEASE enjoy your weekend goodies too:) Also please leave me comments on what you thought about the recipe after making it, and if there are other things you would like me to post about. Protein Pancakes

Hello my friends, you will have to forgive me on lack of posting that I am doing, I have not been feeling my best. I hope to be feeling better soon, and back to posting more:) Here is a great breakfast for all you breakfast lovers, which better be all of you because breakfast is such an important meal that your body needs to burn fat. Don't skip breakfast. Protein is amazing, it is also a fat burner, and is a great thing to take after a great workout. This recipe is simple and tastes great, I hope you enjoy!!
Ingredients
  1. 1/4 cup egg whites
  2. 1 scoop of vanilla protein powder
  3. 1/2 mashed banana
  4. 1 tsp. cinnamon
  5. 1 tbsp. flaxseed
  6. handful of fresh or frozen blueberries after the above ingredients are mixed together

Pour into a pan with olive oil spray- heat on medium. Cook one side until you see the little bubbles....just like cooking any pancake! Flip over carefully and cook on the other side until the middle is done. Top with sliced strawberries and powdered stevia

Energy Sustaining Breakfast Bars

Alright, I know, I am the worst blogger ever!!!!! I have been slammed trying to plan my cute sisters bridal shower and dealing with sick little cutie pies, time just seems to be gone!! So I do apologize. I am leaving for my sisters shower this week, so I will not be posting until Friday, but after that, deliciousness will be headed your way:)
I love these breakfast bars, and my kids do as well. They are so great to have in the freezer for a little snack when time is running short. I hope you and your kids will love these as much as my family does:)
Ingredients
  1. 2 1/2 cups old fashioned organic quick oats
  2. 1/2 cup whole flax seed
  3. 1/4 cup organic dark cocoa powder
  4. 1/2 cup natural peanut butter
  5. 1/2 cup honey
  6. 1/2-1 cup HOT water

Instructions

Stir ingredients together. Form into individual size paddies, like hamburgers. Wrap in plastic wrap and keep in freezer or fridge. Easy as that:)

Kale chips and Guac

One of my favorite snacks right now!!!! I love this guac, it's amazing:) I hope you enjoy it.

Preheat an oven to 350 degrees. Wash and dry kale, break into chip size pieces. Drizzle kale with 1 tbsp. olive oil and sprinkle with sea salt. Bake until edges are brown but not burnt, 10-15 min.

Mash together 1/2 avocado, 1tbsp. chopped onion, 1/4 lime squeeze, 1/2 tomato diced, pinch of cilantro leaves, pinch of sea salt. Easy as that:)

Mountain Dew Apple Dumplings!!!!



Mountain Dew in apple dumplings? You think I'm crazy I know, but let me just tell you, you are crazy if you do not try these:) I am in looooove with this buttery goodness!!! I dare you to try and eat just one, I know I can't!!! I love weekend goodies:)


Ingredients



  1. 2 medium granny smith apples

  2. 2 cans crescent rolls

  3. 2 sticks of butter

  4. 1 1/2 cups of sugar

  5. 1 tsp. vanilla

  6. cinnamon for sprinkling

  7. 12 oz of mountain dew

Preheat oven to 350. Spray a 9x13 and set aside. Peel and core your apples and slice into 8ths.. Open the cans of crescent rolls and carefully separate the dough along the perforations. Place a couple slices of the apples in the crescent rolls and roll up. Place in prepared pan and repeat. In a medium saucepan, melt the butter and add sugar and vanilla. Stir to combine. Pour mixture over the apple dumplings, then pour the mountain dew on top of everything. Sprinkle with cinnamon. Bake for 40 min. When dumplings are done make sure that you serve them warm, and don't cheap out on the sauce, pour lots of that bad boy on top of your dumpling. And if you feel a little crazy, pair it with vanilla ice cream!!! Enjoy

Green Machine Sandwich

I so need to apologize for the lack of recipes lately. Our laptop broke and our computer down stairs is slower than Springtime coming to Rigby, so I have slacked. But I am on board again:)!! This recipe I have not tried yet, but plan to tomorrow. It's from Totally healthy recipes and I love her stuff. This recipe sounds amazing and is full of so many amazing things for your body. I hope you enjoy!!

Ingredients


  1. 1 ripe avocado

  2. 1 orange

  3. 1/2 to 1 tsp green Tabasco sauce

  4. 1/4 tsp ground coriander

  5. 1/2 tsp sea salt and freshly ground black pepper

  6. 1/2 cup yellow grape tomatoes, halved

  7. 1 small cucumber(peel and cut lengthwise, spoon out the seeds, then dice)

  8. 1 large or 2 small radishes(cut in half, lay on flat side, and slice thinly)

  9. 2 whole wheat pitas, top third cut off

Cut avocado in half and remove pit. Scoop out avocado flesh and dice into cubes, and place in a medium bowl. Slice orange in half. take the one half and give it a squeeze over the avocado bowl. Just once around the bowl is fine( about 1 tbsp.) Add Tabasco sauce, coriander, salt and pepper. gently toss mixture with the tomatoes, cucumber and radish. Divide mixture into 2 servings and stuff into whole wheat pitas and enjoy!!!

Lion House shortbread cookies


Love that it's the weekend, which means, GOODIES!!!! Well I should follow that rule a bit better, because it seems that lately we are having goodies all the time:) But let me just say that these cookies are sinful. I LOVE these cookies. It's so bad when I make these because I can never stop eating them:) I hope you enjoy these little beauties as much as my family and I do.
Ingredients

  1. 1 cup butter

  2. 3/4 cup of sugar

  3. 1 egg

  4. 1tsp. vanilla

  5. 2 and 1/2 cups of flour

  6. 1/4 tsp. salt

  7. 1-2 tbsp. water if needed

  8. raspberry or strawberry jam

Cream butter and sugar together until light and fluffy. Add egg and vanilla;beat well. Sift salt and flour together; add to cream mixture a third at a time, mixing well after each addition. If dough is to stiff, add 1-2 tbsp. water. Wrap dough in plastic wrap and chill in refrigerator for about 1 hour.


-preheat oven to 375. Cut the chilled dough into 4 pieces. Roll each piece into a rope the size of your cookie sheet. Put the ropes on the cookie sheet side by side. With your finger, make an indentation all the way down the length of each rope. Bake for 10 min. Remove from the oven and fill the indentation with jam. Put back into the oven for another 10-12 min. Place cookie sheet on rack to cook cookies when done. Cut on the diagonal.

Ancho-Chili rubbed pork tenderloin


I know I say this a lot, but this is one of our all time fav. recipes. We love food, so lots of recipes are our favorites. Your husband will love you so much if you make this for him:) It's simple to make and seriously tastes delicious. This recipe is from one of my fav. websites, simplysugarandglutenfree.com. Ingredients



  1. 1 tbsp. finely ground espresso powder

  2. 1 tbsp. light ancho chili powder

  3. 1/2 tsp. dry mustard

  4. 1/2 tsp. ground coriander

  5. 1/2 tsp. garlic powder

  6. 1/2 tsp. kosher salt

  7. 1/2 tsp. freshly ground pepper

  8. 1 pork tenderloin, about 1 pound

  9. 1-2 tbsp. agave

  10. 2 tbsp. olive oil

Preheat oven to 375


Combine espresso powder, ancho chili powder, dry mustard, coriander, garlic powder, salt and pepper in a bowl. Mix well making sure to break up any small clumps. Dump spice mix onto a plate large enough to accommodate the length of your tenderloin. Rinse tenderloin and pat dry with a paper towel. Rub the tenderloin with the agave, roll the tenderloin in the spice mixture, coating all sides. Coat a cast iron with olive oil and bring to medium high heat. Let the pork rest in spices while cast iron is heating up. Sear tenderloin, about 4 min on each side, until the entire tenderloin has a nice crust on the outside. Once entire tenderloin is seared, place in the oven and let it cook for 20-25 min, or until the thickest part of the tenderloin reads 140 degrees. Remove from the oven, and tent with foil, and let it rest for 10 min. before slicing. Enjoy. Serve these with sweet potato fries and it's a perfect meal:)
